Happily Ever After: Jordan Marshall Photography

New pictures! YAY!

So this weekend we had my sister in law and her boyfriend visit. We were so excited to see them! We had a wonderful time! Jordan is beginning her photography business. Cafe Shelves

So here lately I have been wanting to get a little creative in my kitchen. I have this one wall that is just blah! So I did a little research and found these great idea to build these cafe shelves. Yes, you heard right "build".
After I purchase the products I will post a before and after picture and hopefully (with the help of my hubby) upload a great how to video.

DCHS vs. Pike County

WE WON!

This past Friday we played Pike County at home. We had a fun time cheering on Warriors to victory.It was close 7-6 but a win is a win!

My parents along with our nephews came to visit. Duane enjoyed helping his Uncle Justin on the field. Here are a few pictures from the winning game!

Pork Chops with Apples and Creamy Bacon Cheese Grits

So tonight we tried a new recipe; A recipe by The Pioneer Woman Cook book. I can honestly say you need to purchase this cookbook! All I can say is "Yummy!"
Pork Chops
Ingredients
6 whole Boneless Pork Chops, About 1/2-inch Thick
2 Tablespoons Olive Oil
2 Tablespoons Butter
2 whole Gala Apples, Diced
1/2 cup Dry White Wine
2 teaspoons Apple Cider Vinegar
3/4 cups Pure Maple Syrup
1 dash Salt
Freshly Ground Black Pepper
Creamy Bacon-Cheese Grits (see My Tasty Kitchen Recipe)
Preparation Instructions
Note: See my TastyKitchen recipe box for my Creamy Bacon Cheese Grits recipe.

Heat a large, heavy skillet over medium-high heat. Add olive oil and butter and heat until butter in melted.

Salt and pepper both sides of pork chops. Brown them on both sides until nice and golden. Remove pork chops from the skillet and set on a separate plate.

Reduce heat to medium. Add apples and stir to combine them with the oil, and butter that remains in the pan. Pour in wine and vinegar, then whisk along the bottom of the pan to deglaze it. Cook until liquid is reduced by half, about 5 minutes. Pour in the maple syrup, then add a dash of salt and pepper. Stir, then return pork chops to the pan. Cover the pan and simmer on low for 20 minutes.

Serve pork chops on top of a generous helping of Creamy Cheese Grits (mashed potatoes are good, too) and spoon the apple-maple sauce over the top, allowing the liquid to drip over the grits.

Grits
Ingredients
8 slices Regular Bacon, Cut Into 1/2-inch Pieces
1 whole Yellow Onion, Chopped
2 cups Stone Ground Grits; The More Coarse, The Better!
4 cups Low Sodium Chicken Broth
2 cups Water
2 cups Heavy Cream
1-1/2 cup Grated Cheese (Monterey Jack, Etc.)
1 dash Cayenne, For Heat
Salt As Needed
Black Pepper To Taste
Preparation Instructions
In a heavy pot, cook bacon over medium heat for a couple of minutes to render fat. Add onions and cook with bacon for a few minutes, or until bacon is chewy and onions are golden brown.

Add grits, chicken broth, and water. Stir together and bring to a boil. Reduce heat to simmer, cover pot, and cook 30 to 40 minutes, stirring occasionally and making sure the liquid level is okay. If grits begin to get dry, add a little more warm broth.

After 30-40 minutes of cooking time, pour in cream. Cover pot and continue to simmer on very low heat for another 30 minutes, or until grits are done. Taste and add salt, pepper and cayenne to taste. Remove from heat and stir in grated cheese. Keep warm and serve.

Balsamic-Garlic Chicken

The other night I tried out a recipe I found in my July issue of Southern Living. It is very easy and very delicious.
Ingredients:
4 boneless, skinless chicken breasts
1 tsp salt
1 tsp pepper
2 tbsp butter
1 tbsp vegetable oil
1/2 cup chicken broth
1/4 cup balsamic vinegar
1 tbsp fresh lemon juice
3 garlic cloves, chopped (or 1 1/2 tsp garlic powder)
1 1/2 tsp honey

Directions:
1. Sprinkle chicken breasts with salt and pepper.
2. Melt butter with oil in a large skillet over medium-high heat.
3. Add chicken and cook 6 to 7 minutes on each side or until done.
4. Remove chicken and keep warm.
5. Add chicken broth and next 4 ingredients to skillet, and cook 5 minutes or until slightly thickened, stirring to loosen particles from bottom of skillet
6. Serve chicken with sauce

Trust me it is very delicious! I hope you try this recipe!

GO WARRIORS!

I know it has been a really long time since my latest blog. Now that we are settled into our new home, I hope to blog more about our new adventures.

Hey everyone! After seeing the picture above I am sure you are wondering what it means. So to tell you the latest news. Justin got a coaching/teaching job at Dale County High School, which is in Dothan, Alabama. So we recently made the move to Dothan. After a long search of trying to find a house, we finally found one !WOOHOO!. Pictures to come soon!(Be looking out for a new blog about our home) Although we miss our hometown of Brewton. We really like it over here and are enjoying meeting new people as well as getting acquainted with some of the people we do know. For me, I enjoy the fact of only having to drive 15 minutes to shop, rather than 45 minutes to shop. Which is a really good thing I believe!!!


This year for the team is a building team with most of the coaches being new. Friday night over Headland, we sadly lost 50-6 =(. Even though we lost it was a great game. All the fans cheered on our boys, which to me uplifted their spirits.

This Friday, we are playing Geneva. Hopefully it will be a good game and that we win. Wish us luck!

Honeymoon in Charleston

So we are back to the blogging world. It has been a while since I have been able to post anything. With the stress of moving our things to Auburn and planning for our wedding there has been no time for blogging. Now that we are stress free and settled, I thought it would be a great day to tell you about the wonderful time we had on our honeymoon.

The hubby and I went to Charleston, South Carolina for a relaxing and most beautiful honeymoon.

Our wedding was everything we ever dreamed of, but I can tell you that we were one tired couple afterward. So the night of the wedding we had planned to drive all the way to our home in Auburn so the next day we would not have seven hours to drive into Charleston. Exhausted, we gathered our belongings and left Brewton. Needless to say, I had "no" idea what Mr. Marshall had up his sleeve. He had planned for a romantic stay at the Renaissance Hotel in Montgomery thanks to our wonderful friends, Nick and Judson (there wedding gift). It was so nice not to have to drive all the way to Auburn that night, because I am not sure that we would have made it.

So now onto Charleston!!

So the ride there was pretty long. Justin and I had come to the conclusion that we should have flown, but when we came into Charleston the view took our breath away.

When we got settled in and all our stuff in our room, Justin had a little surprise for me. He had meant to give this to me on our wedding day, but with all the festivities going on, there seemed no right moment to. In a tiny box, Justin handed me my wedding gift...
I love it!
The rest of the day we went sight seeing just to get our barons of Charleston. We were able to walk everywhere, so we didn't need our car for much of anything.

Peonies and Polaroids

So I have been sitting here all morning just not believing that I get to marry my best friend in a month. Can you say wow! After two years of being engaged...you could say it's literally about time. Everything seems to be coming together, and we are so excited to see everything in its place and enjoy our special day. It can not be any better, other than I get to marry my best friend, Michael Justin Marshall.
On Tuesday, I took my bridal portraits in Mobile, Alabama at the Oakleigh Mansion with our photographers, Jeff and Katie Barker "The Storytellers", there assistant Tish was there with us also. I can not wait to see them! I just know that they are going to be gorgeous. Not even to mention how awesome their photography is. Mr. Tri!

Along with the beach this weekend, Justin had the opportunity to do a triathlon at our school, University of West Florida. It was a 5k run, 10 mile bike, and a 400 yard swim. Justin did the 5k in 19:37; transition from run to bike 00:54; the 10 mile bike he did in 35:52; transition from bike to swim 02:00; the 400 yard swim was in 06:25. For an overall total was 1:04:48. Justin finished 20th out of 150 people. So AWESOME!I am proud of him!

Lovelee Affairs

I promise I am going to give you guys some details about this past weekend! It was a wonderful weekend full of parties. Thankful for special families who are apart of our lives who would be willing to throw two FABULOUS parties in one weekend.
The engagement party was Saturday night, March 26th. The party was held at The L House, the old Book and Bean building. What an awesome atmosphere to have a party. The theme was pink and green.

The bridal tea was the Sunday after the party. It was held at a wonderful, christian ladies house, hosted by 11 wonderful ladies.Thankful for our friends and family who are supporting us during this special time in our lives. We received a lot of wonderful things for our first home. Can't wait to get settled in and be able to use some of the beautiful things we got.

Fun at the Beach!

So, how I exciting was I to spend the weekend on the beach with 3 wonderful people; my sweet fiance Justin, my soon to be sister in law Jordan, and her boyfriend Jacob. It was such a beautiful couple of days for some much needed SUNSHINE!
